The summer started off with a field of 16 top executive chefs in the region competing in the Mason Dixon Master Chef competition for the top prize in an Iron Chef Style live competition. Round 1 concluded at the end of June, and round 2 has just begun.

The competition has been running for about 7 years with modifications made annually to improve the experience. This year’s biggest change is that general tickets ($45) are included as judging tickets, meaning that each ticket-holder has the chance to experience all of the dishes from all three courses as well as contribute to the judging.

Each week features two chefs competing to win a themed battle. Battle Baltimore, Battle Fromage and the Grand Championship Battle Royale remain on the schedule for upcoming weeks. The current contenders still include:

From the Mason Dixon Master Chef Tournament Founders: 
The Mason Dixon Master Chef Tournament, now in its seventh year, pits top chef teams one-on-one in a single-elimination bracket-style culinary competition held each summer. Each night of competition the chef teams are required to produce a unique appetizer, entrée and dessert in 30 minutes prep time and one hour cooking time using required ingredients, imagination, and their own culinary talents. The expert panel of judges, as well as audience members decide the winner each night, with one team advancing to the next round, and one team being eliminated.
Tickets for all remaining dates of this summer-long single-elimination chef competition are available for purchase now at: http://www.masondixonmasterchef.com. Tickets for Round 2 matches are just $45 ($65 for Semi-Finals and Championship matches). All tickets include all taxes, a wine tasting by Boordy Vineyards, passed hors d’oeurves, the competition, dessert and coffee.  New this year, ALL Tickets for the competition are ‘Judging Experience’ tickets, which allow all guests to taste each of the six courses the chef teams produce (family-style) and be part of the voting to decide the winner!
In addition, the Mason Dixon Master Chef Tournament donates 10% of the net proceeds of each ticket sold directly to their charity partner Meals on Wheels of Central Maryland (http://www.mealsonwheelsmd.org).

On Saturday June 3rd, Fells Point’s RYE will host another Speakeasy Saturday.

On the first Saturday of every month RYE, on Thames St. in Fells Point raises a glass, and pays homage, to the colorful history of consumption and an era past with a night of indulgence and revelry as they channel the 1920’s with period inspired cocktails, music, and mood.

On June 3rd RYE will partner with Philadelphia-based New Liberty Distillery to showcase their spirits via a custom cocktail menu.

Charm City Hot Club will be on hand to provide plenty of tunes for your Charleston and Foxtrot.

Appropriate attire recommended, password required.

ALS Awareness Month is in May and the Brigance Brigade Foundation is partnering with Maryland restaurants for its 2nd annual ALS Bites! Campaign for the entire month.

The month-long campaign is intended to raise awareness and funds for people battling ALS (Lou Gehrig’s disease) and will benefit the foundation’s mission to equip, encourage, and empower people living with ALS.

“We are honored to have a great group of restaurant partners join our fight against ALS this ALS Awareness Month,” said Chanda Brigance, co-founder of the Brigance Brigade Foundation. “I encourage everyone to visit each of our participating establishments throughout May and follow these four simple steps: Order. Eat. Enjoy. Help a GREAT cause!”

Each participating establishment is supporting O.J. Brigance and his decade of strength fighting ALS, as well as ALS families across the country, by selecting one menu or drink item and donating the proceeds back to the Foundation at the end of ALS Awareness Month.

The Brigance Brigade Foundation, an organization that supports people battling ALS, created by former NFL player O.J. About the Brigance Brigade Foundation:
O.J. Brigance is one of the few professional football players to win both a Canadian Football League and National Football League championship, and the only one to do it in the same city, Baltimore, MD. Brigance joined the Baltimore Ravens in 2000, helped the team claim a Super Bowl victory, and now works as Senior Advisor to Player Development. In 2007, Brigance was diagnosed with ALS, also known as Lou Gehrig’s disease, a debilitating motor neuron disease that strips individuals of their ability to walk, talk, eat, move, or breathe on their own. Brigance remains determined to win his fight against ALS for himself and others battling this disease. Following his diagnosis with ALS, O.J. and his wife Chanda created the Brigance Brigade Foundation to equip, encourage and empower people living with ALS (Amyotrophic Lateral Sclerosis). The Foundation strives to improve the quality of life for ALS survivors and their families by providing needed equipment, resource guidance and support services, in addition to funding various research initiatives. On Dec. 8, the much anticipated food hall R. House will open in Remington. The $13 million food hall which previously housed an historic car showroom and garage, was designed by social entrepreneurs at Seawall to create an opportunity for talented chefs to more easily and effectively launch new restaurant concepts.

R. House’s permanent stalls will include:

After Dec. 8, R. House’s Market and Bar Operating Hours will be:

  • Monday – Thursday: 7 a.m. – 10 p.m. or Close
  • Friday: 7 a.m. – 12 a.m.
  • Saturday 8a.m. – 12 a.m.
  • Sunday: 8 a.m. – 10 p.m. or Close
  • R. Bar opens at 3 p.m. weekdays, and 10 a.m. on weekends and has the same closing hours as the market.

 

While these spots are already set, chefs interested in testing out new concepts can take advantage of R. House’s fully outfitted pop-up kitchen for up to two months.

“Call it an incubator or a launchpad,” says Peter DiPrinzio, General Manager, “this space is a way for local chefs to bring their ideas to life and find their start.”

The expansive 50,000-square-foot-space features15-ft.-tall windows, roll-up garage doors, and 350 seats in 12,000 square feet of wide-open seating with sofas, high tops, low tops, communal tables, booths, patio seats, and bar stools.

“We’ve designed this space so that anyone can come in and find their ‘spot,’” explains DiPrinzio. “By calling ourselves ‘R. House, this space has the potential to become a ‘third place’ for our guests.”

For those looking to host events, the LEED Silver Certified venue also has “The Garage” which boasts 6,000 square feet of open space for events such as private parties, community gatherings, and bike-in movies.

“We imagine this space will become a place for community and celebration,” added Stephanie Hsu, Marketing and Events Manager. “The Garage is a blank slate, so it can be reinvented for each event.”

Drink Ingredients:

  • 1.5 oz. of Bluecoat Gin
  • 2 Fresh blackberries
  • 2 Fresh slices of jalapenos
  • Dash of simple syrup
  • .5 oz. of lemon juice
  • .75 oz. of Pimm’s Liqueur

Drink Preparation:

  • Using an Old Fashioned Glass, add the Bluecoat Gin, blackberries, jalapenos & simple syrup.
  • Then muddle the ingredients.
  • Then add some ice.
  • Add the lemon juice and Pimm’s Liqueur.
  • Stir with bar spoon.
  • Cheers!

Our bartender in this video is Jessica Dupree of Bar Liquorice. Jessica is the bar manager at Bar Liquorice and you will be seeing more of her. Jessica’s knowledge behind the bar will put any customer at ease when seeking any style of beverage. She understands the nuances of blending alcohol, which should please any customer that walks through the door of Bar Liquorice.

This signature cocktail is sweet on the front and spicy in the back. The lemon juice gives it a slightly tart bite under the sweet and spicy flavor. The Pimm’s Liqueur pulls everything together to make it a full bodied drink. The botanicals in the Bluecoat Gin are subtle and smooth.

Drink Ingredients:

  • 1.25 oz. El Dorado 12 year old rum
  • .75 oz. Pumpkin spice liqueur.
  • .25 oz. of Borsci San Marzano liqueur
  • .5 oz. of lemon juice
  • 3 Dashes of orange bitters

Drink Preparation:

  • Add the ingredients to a shaker with ice in the order listed above.
  • Shake ingredients vigorously.
  • Double strain into a martini glass.
  • Garnish with foam and grated nutmeg.
  • Cheers!

How to make the foam:

  • Take the spring from a Hawthorne strainer, place it in a shaker.
  • Add .5 oz. of egg whites. 1 large egg is 1 oz. (2 tablespoons). So you can either take out 1 tablespoon or buy a cartoon of egg whites.
  • Add .75 oz. of Evolution Brewing Jacques All Lantern.
  • .25 oz. of Pumpkin Spice Liqueur.
  • Shake really vigorously.
  • Float over bar spoon.
  • Garnish the foam with freshly grated nutmeg.

Birroteca is a cool restaurant located in a unique old industrial area of Baltimore called Clipper Mill. Birroteca is known for its artisan pizza and Italian cuisine. It is worth the visit.

Nick who is in the video, uses the same creativity in his cocktails that he uses in ceramic arts. Nick has been in several videos already, so be sure try those as well. Nick Ramey is the creator of this delicious signature cocktail and many of the other cocktails you will find at Birroteca. Like many of the bartenders we work with his knowledge of the different brands of alcohol and how they mix with other ingredients is extensive. So you are pretty much guaranteed to get a great cocktail. 

This Signature Cocktail is a perfect cocktail for the fall and Halloween Parties. The cocktail has a nice balance of bitterness and spice.

Pink is the New Greene for October

The Greene Turtle Sports Bar & Grille has declared that “Pink is the New Greene” earlier this month when they announced plans to raise more than $30,000 across all 43 locations to support the Susan G. Komen Race for the Cure in seven different markets, including: Maryland, Washington, D.C., Central Virginia, Virginia Tidewater, Greater Philadelphia, West Virginia and Greater New York.

Beginning on the 1st, the fundraiser kicked off with donations of $5 to the Susan G. Komen Race for the Cure for every limited edition Pink the New Greene t-shirt sold in October. Tees are $10.

Additionally, the signature color of the cause, pink, will be incorporated into menu items including pink chips in the Buffalo Chicken and Chili nachos as well as pink drinks like Strawberry and Raspberry Boardwalk Teas and Lemonades, Grapefruit Crushes, and Kinky Pink Shooters.

“Our Pink is the New Greene campaign is an important community initiative for The Greene Turtle. It’s our way of joining the fight against breast cancer, celebrating survivors, and honoring our customers who have lost their lives,” said Chris Janush, Vice President of Marketing for The Greene Turtle Franchising Corporation. “We hope that our campaign will raise awareness in the communities where we operate by bringing together customers and employees from all 43 of our locations to raise funds for education, research and support services for breast cancer patients, survivors, and their families.”

Drink Preparation:

  • Add fresh cucumber to shaker, with Green Chile Passion Fruit Syrup.
  • Then muddle the cucumber and Green Chile Passion Fruit Syrup.
  • Add the remaining the ingredients in the order listed above.
  • Add ice to shaker and shake cocktail.
  • Double strain the cocktail into a Coupe Glass.
  • Garnish with Lime Wheel.
  • Cheers!

This cocktail is a little sweet and tart from the Passion Fruit Syrup and the lime. The Elderflower Liqueur and Habanero Shrub give the cocktail a floral kick making it great cocktail for any evening with friends.
